Natriumnitriet

Met een verklaring waarom er E300 (vit c) bij wordt gedaan.
Natriumnitraat en natriumnitriet zijn los te koop.

Het lukt me niet om een bepaalde link te plaatsen (geen idee waarom en wat er zo bijzonder is aan die link, maar dat is verder niet erg, hier onder de tekst)

"Voor de chemici: natriumnitraat en natriumnitriet worden gebruikt als conserveermiddel in vlees. Nu las ik op het internet dat er een kant-en-klaar mengsel te verkrijgen is onder de naam Prague #2 powder. Ik kan dit in principe zelf maken: het bestaat uit natriumnitraat: natriumnitriet:natriumchloride in de verhouding: 0,64:1:16. Dit mengsel zorgt ervoor dat de groei van schadelijke bacteriën wordt gestopt en de nitriet reageert met de myoglobine tot een mooie rode kleur. De nitraat wordt microbieel geleidelijk omgezet in nitriet en zorgt dus voor een soort retardwerking tijdens het droogproces van 2 weken. Het ascorbinezuur is noodzakelijk als sterke reductor om overtollig nitriet weg te vangen zodat er geen schadelijke nitrosoaminen ontstaan."
 
Ik ga donderdag weer naar Matthijs de Haan om o.a. nitrietvrije leverworst te halen en vleeswaren haal ik ook nitrietvrij bij de biologische slager.

ben ik de enige die de link bovenaan in deze tekst niet kan openen?
 
Vitamine C, ach we wisten het eigenlijk al......
Uit één van de bekeken onderzoeken kwam echter naar voren dat de vitamine C en de polyfenolen (een grote groep chemische verbindingen) in groenten en fruit de productie van N-nitrosamines remmen. Ook toonde een ander onderzoek dat het eten van nitraatrijke groenten bevorderlijk kan zijn bij het voorkomen van hart- en vaatziekten.
